Our 4th of July weekend celebration has started

Our Fourth of July weekend celebration has already started. The granddaughters arrived yesterday afternoon, Mike and the grandsons will be here today. Going to be a big party and huge celebration at the J&D Ranch with family and great friends!

Fifteen pound brisket went on the smoker at 3:30am. Should come off the smoker around 4:00 PM this afternoon to rest for a couple of hours. Maple bourbon glazed pork belly cubes will go on the smoker around noon. New entrée for this year’s celebration, four racks of deep fried ribs tossed in BBQ sauce, some in buffalo wild wing sauce and some in Sweet Thai Chili Pepper sauce. They looked amazing on line.

Going to be a quiet one this year. Wife and I plan to take the day off from packing since it’s also our anniversary. We’ll get away from commie town and do something, not sure what yet.

Hope you enjoy your family gathering celebrating the birthday of the greatest nation on earth.

Our feast turned out fantastic. The brisket was outstanding as always. The deep fried ribs with the Thai Chili pepper sauce were beyond fantastic. The pork belly turned out great and using the Thai Chili Pepper sauce really made the flavor outstanding. Next time I'll do a better job of trimming the pork belly. I left a bit too much fat on some pieces. Our family, friends and neighbors really enjoyed everything.

You certainly had a feast.
We will be going to @Fisheadgib and Ms Debbie's ranch for the 4th and they know a place for fireworks. This will be our first 4th of July in the Panhandle.

It's just the wife and me, but we know how to party! Breakfast was BATs, Bacon, arugula, and tomato on sour dough bread. Arugula has muck more flavor than lettuce. Dinner was a smoked, pulled pork butt sliders on Hawaiian Pretzel slide buns with stubs BBQ sauce and an Asian style coleslaw. We finished the evening with a bottle of Rodney Strong Rose".

This morning, we'll start with French Toast and Canadian bacon, The French toast will be made with maple/brown sugar bread with fresh ground nutmeg, cinnamon and vanilla bean paste. I prefer rich toast, so I add half-and-half instead of milk.

We watched the neighborhood children play and set off fireworks last evening. Ruger wasn't too happy, but he handled it well enough.

The deep fried country ribs are a Latin staple. Funny I never hear folks talk about them much. They are one of my favorite meats and I make them in the air drier relatively often 👍👍👍

Pork fat is awesome
