Yeah, but it's hard to find good cracklins around here

Thank you learned how to make good southern cornbread many years ago

Very similar to our "tortilla soup" . . . if we put any more cheese & stuff in, it would be a dip!

Take the leftovers from two large orders of Chinese boneless BBQ ribs from dinner two nights ago, dump them into a pot with 1/2 beer and simmer for 15 mins stirring every once in a while. Add a few shakes of cumin, and two cans of Bush Chili Beans into the pot and heat up while stirring occasionally, keep the heat low. A healthy dollop of your favorite BBQ sauce and serve yourself a bowl. Even better next day, reheated.

You’re welcome…
That's funny, I've been doing that for YEARS!!! Except I use Bush Baked Beans and I add some of my home ground Chili powder!!! It's freaking delicious...

I have a problem
When we have Chinese bbq ribs there are no leftovers

we decided to host hot pot this week to observe the lunar new year. Year of the snake. That means hordes of in-laws will descend on our house guzzle the entire liquor supply, eat like it is the year of the hog, likely draw complaints from most of the neighbors over parking and noise, then it will be a multi day cleanup. I just love spending holidays with family!

I love Chinese BBQ boneless ribs. If I don’t do the beans thing I just eat them cold out of the fridge next day like meat candy. Your party description is the reason I have a SMALL group of folks that I’ll ever invite to my house and have given the wife a strict limit of 6 folks at a time for dinner.

I made "hoppin' John" for dinner last night. Wanted to make a pan of cornbread to go with it to sop of the pot likker ,however the wife forgot she'd used all the corn meal :(

Edited to add: Change I made from "normal" hoppin john is that I used smoked sausage instead of ham hocks in it plus some "slap yo mama" creole seasoning

Didn’t know what that was so I googled it. Sounds a lot like Louisiana Congri which I have had. Delicious stuff!!!

Basically, "red beans and rice" but made with black eyed peas instead of red beans :D

Yep, another version of that godly combination of “rice and beans”, but in the Louisiana Congri and from what I googled, in your recipe they get cooked together right? I’m asking because I find it interesting and I’m now planing on making it soon.

There are several versions of this “combined” dish which is REALLY popular fare all around the Caribbean too. Cubans have two versions of it, one with red (east coast) and one with black (west coast. The black version is also called Moros (short for Moros and Christian’s). Puertoricans do mostly the red version.

Now in Louisiana’s traditional “red beans and rice” they get cooked separately. BTW my New Orleans Red Beans are my Son-in-Law’s favorites and they are now in the “Family Recipe Book” we’re putting together for the next generation. They get cooked with smoked pork ham hocks and Andouille Sausage 😎

Pretty much all the areas in the world that have rice and beans available, have a dish combining them. Neither has all the amino acids to make a complete protein. However, combined, they do
