For you folks who say the only part of the wild turkey worth eating is the breast, you have a rectal cranial inversion. I shot a Jake last Monday morning, just for S&Gs I kept the legs and thighs. I put all the meat in a brine for 24 hours and made the above casserole this morning. I have to admit I cheated, I cooked the legs and thighs in a pressure cooker for a half hour. I used two cups of water and the meat fell off the bone. I used that broth to make the brown rice for the casserole. I mean to tell you IT IS GREAT! The meat is tender and the flavor is there. I would have made turkey bone base with the carcass but I don't have much need for that. Next fall I probably will. The breasts will get wrapped with bacon and smoked tomorrow.
I also have a couple projects planned for this bird. I'm drying the fan and stubble of a beard for a mount, I removed and prepped the wing bones for two turkey wing bone calls, and I'm going to make a "War Bonnet" with the wing and other feathers. I'm getting my left ankle replaced in three weeks and will need a project!
