Jay seasoned and marinated it. Froze it and then, when thawed, wrapped it in bacon and smoked it. We chopped it up and finished it on the griddle with jalapeño & onions. It was awesome!

Jalapeño/Heart/Macon Popper was amazing as well!

This. Shoot a sow, that doesn’t stink… when the meat is good, it smells like dove meat. Which begs to be paired with bacon and jalapeños.
The meat is very lean and has a lot of connective tissue. Bacon adds some fat. Stripping the meat off the bone and slicing it thin helps with tenderness. I smoked it to 160, let it rest, we sliced it up, chopped the bacon up, and finished on the griddle. Javelina is edible.. if everything works out right.

Thanks guys, good info! Might have to take a few and experiment. There’s a Bkackstone Grill in my near future and Javalina Tacos seems appropriate for a break-in

Thiccboi smoked pork chop, Lima bean with a can of Rotel tomatoes thrown in. Why? They were on the counter and I was unsupervised.

First time trying this brand lump charcoal. It's some of the best I've used - very large pieces of hardwood and great flavor.

Thanks. We want to grill more this summer. Including more fish. We get so much wind on this ridge, it's hard to keep a propane grill hot. Thinking of getting a charcoal grill again.

Put the whole pot of left-over roast in the fridge last night. Got it out today and added a big can of (quartered) peeled whole tomatoes and vegetables.
Voila! Vegetable soup. Still have half of the corn bread to/too/two/tutu......
