Either one is a hotdog down a hallway in this barrel but it would likely be fine, pressure wise.

BP revolvers are kind of fun but a bit of work to feed and clean. So much so, they only see the light of day a couple time a year sad to say.

I have a couple of 1858 Remington with 45 colt conversion cylinders, they can be fairly accurate. Still have one in 36bp that I might convert to 38.
Need to be steel frame to convert.

Oh boy, I just unpacked my smoker. Haven’t seen it in 4 years or more. I have to go back to Costco!!! Damn that looks good.

It IS good. The majority of it I just used a basic cure. Pink salt #1, salt, sugar. Which is really good by itself. Two smaller chunks of the butt (last pic) I peppered the crap out of one, and peppered and garliced the crap out of the other. ( along with the basic cure)
I learned my lesson doing a whole recipe as an experiment. So the two will be the science for this go round.
A quick slice off the back bacon said it was SALTY. I used the exact same ratio as I did on the butts. I rinsed them after removing from the vacuum bag they were cure in. I guess the leaner meat may soak up more of the salt?
The real test will be in a couple days once everything has a chance to rest and blend and be all happy happy.

Highly interested in your results. I’ve only done belly and that is usually relatively easy to gauge. The thicker cuts look a little more tricky.

Second time Ive done it. First shot was freaking amazing. Dont think this will be different. I do slice the butt in half thickness wise before curing to get it more belly size. The loin I did was thicker than the butt pieces, but it still cured in a week. Side note, I cooked one till it was 160 plus, AKA done. It made some tasty canadian bacon. Ill find a link...

Here is the basic cure that I used. From this, you can add whatever seasonings you care to add. The only caveat to all of this is that you need an accurate scale, which are pretty cheap from the usual scumbags. Just weigh your meat and plug in the numbers and it will tell you by weight how much of each ingredient to use.
