Since leaving Kaliforniastan I haven't been able to waterfowl hunt which I really loved to do! We're not on the flyway and have mostly diver ducks. Since they taste like liver I'll let them live. The one thing we do have are resident geese, nucence geese, but try to find a place to hunt them. Well, I found it five minutes from my house! A lady who lives next to the local river has them in her yard and had 45 in her yard yesterday. I made a google map picture, took all the measurements and called the game warden, he met with me today and gave me the go-ahead with proper permission slips. These geese will be landing within 15 yards. Hardly a "hunt" but I'll take it! I like goose. With my legs and ankle this couldn't get better, I might be shooting from her back pourch out of the weather. She has a kayak on the property to recover and goose that drops in the river! I'll be making a permission packet for the two local police and local game wardens incase some passer-by tree hugger wants to cause a problem. I haven't been this excited since I built my hunting blind. I'll add pics soon.

So do you get to remove them as nuisance critters or have to wait till

Where I deer hunt is a flyway for geese. I love sitting in the tree and having several bazillion geese flying overhead.

Congratulations! I’m unfortunately the only one in my house that likes to eat geese and duck so I don’t get to eat it very often. I think it’s time to try to re-introduce them to my family again.

There is
an early season starting Sept 1st thru 25th then again for regular waterfowl season.

I know a lot of folks just breast them but I have plucked and brined them in the past then cooked the entire bird. It's the same for turkey out here. I removed the skin, breasted it then used the presure cooker for the rest of the bird. I made a SW turkey rice casserol that rocked. I will be experamenting with geese.

Pan fry a mess of bacon strips........put the cooked bacon into a large pot and deglaze the pan with a cup of water.
Slice the goose/duck breasts into thin strips then pan fry in bacon grease....add to the bacon and deglaze the pan with a cup of water. ( Add a cup of red wine to give it some body if you want)
Pan fry some onions the same way...dont add water ( optional)
Do mushrooms the same way...(again optional)
Simmer the bacon/goose mix and reduce it down then thicken with some cornflour.
Place in a pie dish...cover with potato mash.....grill till the top is crispy and brown.
Serve with fresh greens.

If they dont like it, you get to eat it all

If you got a problem with Canada Gooses, you got a problem with me. And I suggest you let that one marinate.

I do enjoy shooting and eating geese. Only done it once. But, it was awesome.

I’d like to try goose sausage. I’ve had duck sausage.
