We tried cooking bacon in the oven, and every restaurant around here makes their bacon in the fryer.......... all WRONG!

When they ask, "Do you like your bacon crispy or chewy?" I say both!

Memorial day weekend for the wife and daughters b-days I got a 1/2 pork loin.

Sliced 2 in think slices out of it, laid them on their side and beat the snot out of them with the meat hammer
Took a sharp thin knife and sliced pockets into them
Stuffed the pockets with chopped jalapeños, mozzarella cheese, and 4 slices of andouille sausage, pinned with 2 tooth picks
gently seasoned the outside with Slap Yo Mama seasoning
Seared in a cast iron frying pan and took that to the oven for about 25 min

Then I took pineapple chunks, butter, the juice from the can, brown sugar, a little corn starch and a healthy shot of Cruzan black strap rum and cooked it down to spoon on the stuffed pork chops. Served them with mixed veg and perogies.

Finished it off with a pound cake I made, with strawberries and homemade whipped cream.

I ate till I hurt myself

Going to try it again this weekend with gouda

This is the end of Strawberry 🍓 season here. On our second butter recipe yellow cake... tonite should be the last of the 🍓 ..... finish cake this weekend with some chocolate frosting

Tonight? the remainder of the pork butt I smoked Memorial day. It's been vacuum sealed and in the freezer, so it's currently in a pot of hot water heating up.

On my own after work tonite. Maybe some leftover sausage, onion , and potato soup with a grilled cheese sammich?

Or....

Not dinner but this morning I put together a pretty good breakfast sandwich: Toasted everything bagel, veggie cream cheese, spinach, and maple chicken sausage.

Last night I fried up some kielbasa and Wife made her macaroni salad. Tonight we’ll visit our local Mexican place.
