Bad Pone

A few weeks back when it was well into the 110s I decided it was time for a pot of chili. Nothing better on a really hot day!
Picked up the meat and peppers had all the other ingredients for my South Texas recipe. Got everything going and about 30 min before it would finish started the cornbread. Yikes out of coarse cornmeal! Noticed a bag of mix the Mrs had bought so followed the instructions exactly. Absolute baked brick! Foul, tasteless, odious! It was gluten free from that Oregon mill. double wrapped it in a trash bag put it in the can immediately sure didn’t want the dog to get it. So heads up there is no worse food product!

I'm pretty sure they use a fat truck driver to sit on the mix during transport to get that texture just right.

Apparently, sitting on it removes the gluten also. ✅

I buy those small boxes of Jiffy mix then add more corn meal a bit of flour salt and baking powder (a little sugar if I want it sweet). Liquid as needed and extra egg.
Turns out good.
I like chili on cold or cool days best, made some yesterday.

First clue was "gluten free."

Sugar? Jiffy Mix? Y'all need to get your hearts right. It's in the Book of Martha White, 4:50 "Thou shall not put sugar in thine cornbread, lest thou makest a cake."

From what I can find, only wheat, barley and rye contain gluten, so "pure" cornmeal does not.
Since I don't eat it, I can't tell you if Jiffy has gluten containing grains in it or not

I’ve had one experience with cornbread mix and it was disgustingly foul, never again! I’ll stick to the scratch recipe (no sugar!) it’s no more work than the mix. 20 Hail Marys for my egregious culinary sins and inadequate management of the cornmeal supply on hand.

Cornbread should have zero sugar. Self-rising cornmeal is OK, but say no to cornbread mix. No eggs, either.

I agree that “real” cornbread shouldn’t have any sugar but that Jiffy stuff is pretty tasty with a cold glass of milk 👍👍

This is the same as the sweet tea vs. unsweetened debate. I love sweet tea but damn sometimes it’s like drinking syrup, why I h is usually the way the person who made it intended. I order 1/2 & 1/2 in many restaurants and seems to be a decent balance. BTW my wife is in the no sugar camp.

They got confused some time back and put the tea's sugar in the cornbread :lol: :lol:
