Improved Sharpfinger in the works. Different plunge line, because the original is dumb. And added a choil to make it easier to sharpen the entire edge. Jimping on the top. Handle will be 1/2” longer.

I also normally make 25# batches at a time and add encapsulated citric acid for a more tangy bite

This was like 3 pounds.
I learned my lesson making big batches that i haven’t tested. I had (tossed in trash) 25-ish pounds of chorizo that I made using a store bought spice pack

Got a new knife, amazon Chinese special of course but I'm actually pretty surprised with the quality. This thing is stout and came with a good edge and it's own stone. I always liked this look because it reminds me of a switchblade that my dad gave my brother. This one is spring assist.

Blue tooth meat thermometers are the way.
I bought one for smoking the turkey also. It was a big game changer not having to keep guessing or opening the door to jab a thermometer into it and screwing up the cabinet temperature. Mine kept disconnecting though and I'd have to go outside for it to reconnect which was a little annoying because I was definitely in range.
