A real easy one, is make the cheap canned biscuits, brown a pound of whatever sausage appeals to you, stir in a big spoon of flour, keep everything bubbly hot, and add milk till it's the texture that you want. Toss in a can of Rotel tomatoes and you have some zing.

I don't eat any of them. One of my brothers likes all things scrapple.

Good scrapple browned in butter is hard to beat. My Grandmother used to make it with a lot of corn meal and it was real good.

I have two decent butcher shops in striking distance. One makes good whole hog and the other makes real good whole hog so one of those will be going in. Flour.. like a large mixing spoon heaped?

A heaping table spoon. You brown the flour in the grease from the sausage and add milk till you get the texture that you want. You have to have the heat high and bubbling and keep stirring it.

To avoid lumpy gravy sprinkle flour by tapping a tablespoon across the skillet. Blend with oil or sausage drippings until smooth then you have rue lower the heat before adding milk. Half and half works better.

Wagyu tallow mixed with the grease from the sausage to make your rue. Add Whole milk to the consistency you like. Finish with a couple pads of butter. I swear by the Wagyu tallow.

White gravy isn't much more than a variation of a bechamel sauce.
Equal parts fat and flour, cooked a couple of minutes to get rid of the "raw flour" taste then mix in milk, heat to boiling then continue to add milk until you get it to the consistency you want.
A pinch of salt, PLENTY of black pepper and mix the browned sausage back into it.
Spoon over split opened biscuits and enjoy

Have always just called it milk gravy, only change I make is I like it with evaporated/canned milk.

I always add granulated garlic, course pepper and when it all starts thickening up, a tablespoon or so of brown sugar and stir it in. Lay a fried egg or two on top the split biscuits and cover it all with the gravy and enjoy!
Be sure to be in proximity of adequate facilities an hour or two later.

I’ve always done Jimmy Dean hot sausage, browned and crumbled. About an equal amount of flour to grease, constantly stirred and cooked a bit to get rid of the flour taste. Then add milk and simmer for desired consistency, with a bit of salt and way too much fresh ground black pepper.. Skip the biscuits for convenience. Put it on toast, SOS style, with a couple fried eggs on top.
