As per JBOhio, 50/50 chicken broth/cream of chicken soup. And a diced onion in the crock pot.

I seasoned them with my rub mix and then browned them in the pan first.

Best rabbit I’ve ever had! Tender. Juicy. Meat pulled right off the bone!
The squirrel was even better. Just not much meat on them.

Had some goulash last night. WIfe used a real recipe (everything but the bay leaves). It was really good.

We up on a similar dish. It's called Johnny Marzetti (or just Marzetti) around here. Elbow macaroni, hamburger, tomato paste and or juice, and or diced, and cheese on top.

Today is a beef roast w/ carrots, potatoes, and onion. We got it from a neighboring farmer. They have a little store in their garage. Have to call ahead to make sure they will be there.....All Highland cattle. Their beef is within a $1/lb of the store. We will probably get all of our beef and pork there from now on. They said they had 23 calves.

There is a Mennonite farm around here that has whole chickens, turkey, and Guinea fowl for sale. Need to track them down. I need to go back to using cash for these small businesses.

Indeed. Because that encourages people to not pay taxes.

Deboned and butterflied pork shoulder. Seasoned with my own homemade “adobo” spices, then locked in a vacuum bag and sat in the fridge for 4 days so the spices and salt would penetrate throughout all the meat.

Seared over an open flame and then roasted at 300 degrees in a Green Egg (damn I love this thing!!!) loaded with Kingsford real wood chunk charcoal.

Sliced relatively thick and served with white rice and black bean Cuban style…

The nice lady that brings us free fresh eggs @ work has gotten into a new hooby. Ducks!

Image

Decided to make an omelette. The pan I use three chicken eggs to make an omelette was to small with just two duck eggs. Couldn't do the tri-fold. More of a duck egg taco. Some of the mushrooms and cheddar oozed out. Tasted good though!
