Pizza a chicken nuggies. On a work trip, my choices are Casey’s convenience store food, or dollar general.
The motel restaurant closes at 5PM.
Which the pizza is excellent, so are the nuggies
There's a gas station/corner store in the little pissant town of Clarksville Ohio that has the best ever food. They're known for their potato wedges and chicken. It makes absolutely no sense as to why, but people drive from all over to get food there and I miss living about 6 miles from there. The price was dirt cheap too and you'd get a large Styrofoam container full for less than $5.

No pics from making it, but I made a batch of carne guisada using this starter in the instant pot:

Turned out really good for being a jarred sauce. Would reccomend

Sausage and chicken jambalaya last night. The chicken was left over rotisserie chicken, deboned and chopped up and conecuh smoked sausage. Was quite tasty

Wife talked me into doing smash burgers on the flattop again last night. While I would rather grill a burger, I have to say these turned out pretty damn good

We still have an IGA locally. They still have butchers cut their own meat in-house. Kids are having friends over and I'm not springing for steaks so......

We actually have two. One is a small town store that was owned by a private owner till IGA took it over a few years ago. This is the one with the butchers. The other is a larger store and their meat comes in prepacked. We don't touch it.
More and more we buy from two local meat processors. One is a custom shop. The other is a county away but getting freezers in more local stores like the Drug Mart in town.

I freaking LOVE pork steaks. How thick and how did you cook it? Seasonings? I’m going to try one with the new Mango Adobo I just found…

It was in between 3/4-1”. “New” (name change) grocery store sells them. It was damned near two pounds.
I used this rub:
https://headcountry.com/products/the-or ... seasoning/
It’s CHEAP at Walmart. Some of the BBQ rubs are STUPID priced for what they are and no more than you get. I tried this on a whim and it’s awesome on pork.
I threw it on the pellet smoker on full blast, which is only about 400-ish degrees or so. Cooked it to 165°.
The thick cut is where it’s at with pork steaks.

Oh absolutely is! Though I’m a big fan of thin pork chops deep fried crispy as long as you eat them right out of the lard I fry them in.
Thanks for the link

Decided to throw every thawed out protein I had in the fridge on the smoker last night.
Boneless, skinless chicken thighs
Venison Link sausage
1lb chub of venison breakfast sausage.
They are all outstanding. Now I have a lot of smoked meat leftovers in the fridge

Instant pot jambalaya. One link of andouille sausage, 1 lb shrimp, 2 cups cooked shredded chicken, 1.5tbsp Cajun seasoning, 7oz diced green peppers, 1.5 cups rice, 4 cups chicken stock. Put in instant pot on rice setting for 8 minutes.

Not bad. Maybe a tad too much creole seasoning. But man was it easy to make.

I don't know, but I can damn sure promise that it'll taste better than the swill they served me in the hospital.
Hell, chicken nuggets and tater tots in the airfryer would be a HUGE improvement.
Even the sandwich boxes sucked
I ate a pack of orange jello and drank 1 cup of coffee. The rest of the food, I'd put one bite in my mouth spit the crap out

It’s been like 4 years since we got the pizza oven fired up, so when my wife started thawing out pizza dough, I cleaned out all the ash, desiccated wasp nests, and started a fire

I do love the woodfired pizza oven, but man… the prep to get it up to temp takes some time. Not something to do every day, but it hits when you do it right

Looking tasty.
Since I had both hyperbaric and wound care appointments today, wife and I are hitting up our favorite Mexican joint for dinner. Unsure what we'll have, yet.
