If you go to a festival or a county fair in NE Ohio, you get a DiRusso's Italian sausage sandwich (and carny fries with a Lemonade. Funnel cake for dessert.)

You can buy them in the store so we made some tonight. Same as the trailers make them. Sautéed peppers, onions, and marinara sauce.

What pellets did you use? Those look good!

Ive tried smoking some of the salmon catch but quickly went back to the original recipe grill with cover or oven

Salt, pepper, butter, in that order, skin down 400 degrees, 20min per inch Serve with drizzle of balsamic glaze

Thx for the brine recipe
We have a couple ocean salmon from earlier this year in the freezer. Ill have to try the brine method, though ill just put some filets on the grill after the marinade.

I’ve never made chili before. Need to learn. Closest, my skill level can come is Buffalo Helper.

Buffalo
Chipotle
Puya Peppers
Cheese
Onions
