Ribeyes, beer batttered onion rings and zucchini, heirloom tomato and cottage cheese on top.

These were definitely a ‘test run’. I under seasoned them and used too small of tortillas. For Fathers Day I threw a few prime Ribeyes and Filet Mignon steaks I had kept in the fridge vacuum packet in my dry rub for 3 days. Cooked them over lump mesquite charcoal until perfect t medium rare.
Added a batch of oven baked potatoes which I slathered in virgin olive oil and coarse salt and pepper for a crazy good crispy skin and my wife sautéed a batch of assorted mushrooms. Finished the plate with fresh corn on the cob roasted over the same mesquite coals.
Damn that was a good dinner. The leftover steak will make killer sliced cold steak sandwiches on fresh French bread with my orange German ketchup and cheddar.
